The school’s branch in Bangkok, Thailand, is exploring an important and often overlooked source of nutrition

After Le Cordon Bleu, will insects graduate to more of the world’s restaurant menus?

Insects, perhaps the last frontier of culinary exploration, have finally made their way to Le Cordon Bleu, the famed French cooking school first established in 1895 (whose alumni include Julia Child and Kelis, of “Milkshake” fame).

Earlier this month, at the school’s Bangkok branch, a seminar on “Edible Insects in a Gastronomic Context” invited students, scientists, professors, and insect farmers to learn about the potential behind expanding the role of the insect in the kitchen. There was, of course, a tasting menu as well.

Highlights of the evening included an ant-infused gin and cricket consommé, though there were also “silk worms, bamboo worms, and live water bugs as big as a toddler's hand,” according to The Associated Press.

It was the first time in the school’s 120-year history that insects were invited to the table, though the idea of insects as a purposeful ingredient has been gaining more and more traction, especially outside of the United States.

In Brussels, for example, worms have made it into college cafeteria menus. In Southeast Asia, there’s no room for the squeamish, as insects have long been included in local diets.

We do think it will take some more time for Western palates to be accepting of bugs as an amuse-bouche, though, as one French chef told The Associated Press, “We eat escargot. They’re ugly. But in fact, it’s delicious.”

Messy Nessy Chic

Venice, Italy is probably not the greatest match for someone with a deep phobia for mass tourism. But hey, there was a hotel sale this month on the wonderful VoyagePrive.com [if you’re not signed up, hi, welcome to this century, glad you could join us].

So what did I do when I got to Venice? Well, I hopped on a boat and I got the hell out of Piazza San Marco ofcourse.

It’s easy to forget that Venice isn’t the only magical, slightly weird water world around. The Venetian lagoon is home to more than 30 other inhabited islands, one of which is Burano

The stuff of dreams, prettier than a Greek island, ‘charming’ wouldn’t even begin to cover it. An hour’s boat ride on the public water bus or vaparetto takes you to this quiet fishing island with a current population of about 2,800 inhabitants.

Famous for lace-making and its brightly-colored fishermen’s houses, the doors of Burano are left open and laundry hanging outside on lines to dry add to the impression of a friendly and tight-knit community. I’d like to take credit for how well my photographs came out, but this island is just so damn cute that you really couldn’t take a bad picture.

Places to eat

1) Bustronome – Gastronomic

To visit Paris while eating French cuisine is rather tempting, but you must admit, eating and walking at the same time is never easy.

Yet every problem has a solution and the Bustronome solved this one by enabling us to eat while we discover Paris from a bus (not the public transport buses… you have to have standards).

You will discover both the French capital and its cuisine thanks to Vincent Thiessé’s gastronomic meals.

You can have a taste of foie gras in front of the Louvre, savor a sea bream under the Eiffel Tower, and discover a pastry around the Trocadéro.

It is far better than traveling by metro.

Budget: Around €65 for lunch and €100 for dinner.

2) Le Procope – Historical

13, rue de l’Ancienne Comédie, 75006

The oldest café in Paris is a must-see for all those who want to see the authentic Paris.

This café has a long history, as it was founded in 1686 and saw centuries, styles, and celebrities.

It first was a coffee shop and an ice cream maker, and soon became the first literary coffee shop in the world and saw Voltaire, Balzac, Rousseau, and Verlaine in its walls. In the 18th Century, the French Revolution took place in Paris and new faces like Robespierre, Diderot, and Napoleon Bonaparte would go there.

Today, Le Procope has been renovated but still bears traces of its glorious past for history and literature amateurs to see.

In this authentic decor, you will find traditional cooking which, while not sparkling with fantasy, is not in want of quality.

Budget: Three-courses-meal for 28,90€

3) Bouillon Chartier – Historical

7, rue du Faubourg Montmartre, 75009

It is historical, yes, but for a small price!

Not far from the Grands Boulevards and its many shops, this brasserie (both pub and restaurant) is absolutely not recent.

It was founded in 1896, opens every day, and its main room has been classified as part of the French Historical Heritage since 1989.

During all those years, the menu has almost never changed: snails, eggs and mayonnaise, camembert, baba au rhum …

Why would they change the recipes that worked for a century?

Even if they only serve traditional meals, they have many Parisian customers.

You have to come early if you don’t want to queue up with an empty stomach.

Budget: About 15 € for three courses.

4) La Cantine du Troquet – Traditional

“Pernety”, 101 rue de l’Ouest, 75014
“Dupleix”, 53 boulevard de Grenelle, 75015
“Daguerre”, 89 rue Daguerre, 75014
“Cherche midi”, 79 rue du Cherche Midi, 75006
“Pereire”, 46 rue Bayern, 75017

Chef Christian Etchebest chose to glorify “bistronomic” food (unexpensive meals but expertly made) through his restaurants and opened three “cafeterias” in Paris.

The friendly atmosphere and French Southwestern meals will allow you to experience the soul of French cuisine.

Among the cafeterias’ specialties, we’d like to point out the roasted quail served with bacon, the lentil cream with foie gras and its golden croûtons, and chocolate quenelles, along with many (and tasty) wines.

It is a cafeteria indeed, but far better than those we are used to.

Budget: Around 35€ (three courses).

5) Le Chalet Savoyard – Traditional

There are no mountains nor is there any permanent snow in Paris but that doesn’t mean there aren’t any Savoyard restaurants such as is the great Châlet Savoyard.

This restaurant provides true Savoyard cuisine in a wooden atmosphere giving you the feeling of being in a mountain chalet for the time of a meal.

Whether you want raclette, tartiflette, pierrade, fondues or any other Savoyard specialties -not to mention their incredibly exquisite desserts, you’re definitely sure to find something that will satisfy both your taste and your empty stomach.

Budget : appetizers are 9,50€ (la petite) 16€ (la grande)
Menu « le Chalet » 31€

6) Le Sergent Recruteur – Traditional

41, rue Saint-Louis en l’ïle, 75004

Le Sergent Recruteur is an old inn on the Ile Saint-Louis but it has managed to keep a touch of modernity thanks to the renewed traditional cooking.

Chef Antonin offers a gastronomic journey, including truffles and foie gras ravioles (some big crusted ravioli), roasted turbot or lemon pie.

It is definitely not cheap, but the fresh products and their delicious taste are worth the price.

Le Sergent Recruteur comprises of a bar where you can drink a glass of champagne, wine, or a cocktail and start out your French cuisine through some appetizers (oysters, foie gras, caviar, cheeses …).

Budget: About 39€ for lunch and 49€ for dinner.

7) La cave de l’Os à Moelle – Traditional

The os à moelle is a classical French dish but also the name of a restaurant you must absolutely try out in Paris.

Chef Thierry Faucher began in famous hotels such as the Bristol and opened his own restaurant in 1994: L’os à moelle.

The Cave de l’os à moelle, just in front of the restaurant, opened a few years later and is now one of the main table d’hôtes of Paris.

You can savor meals from your childhood or from the countryside in a friendly atmosphere.

Country terrine, tripes, rice pudding, and many others … There are so many choices!

Budget: Around 25€ (all-you-can-eat buffet).

8) Les Fils à Maman – Traditional

57, rue des Batignolles, 75017

With old-fashioned toys, table soccer, cartoons … The five friends who opened this restaurant really bring us back to childhood.

The decor is charged with many memories and so are our meals.

The first courses mix tradition and innovation such as, for example, breaded Babybel croquettes, chicken fingers, and a plate of diverse pork deli.

The courses follow the same guidelines: smoked pork belly in a cordon bleu, mushroom lasagna, or the daily special, written on a blackboard, just like in school.

The desserts are closer to birthday cakes than anything else: you can choose between a Kinder tiramisu, a plate of biscuits, Nutella, banana and whipped cream, and more delicacies.

Budget: Around 20€ for a 3-course meal (this menu is only available on weekdays)

9) Nos ancêtres les Gaulois – Traditional

39, rue Saint-Louis en l’Île, 75004

This cave will transport you back to antiquity and to a Gaulish buffet.

The all-you-can-eat formula (wine included) will make you feel like you are at a Gaulish feast.

This idea was born in this very place in 1969, and it worked so well that, today, you can find the “cave” in three different buildings, in 7 rooms welcoming up to 300 people.

In this cheerful atmosphere, you can have raw vegetables, meat pieces grilled in front of you, cheese, dessert, as much all you can eat!

You can even go pour yourself a glass of wine from the wine cask (all-you-can-drink as well).

Perfectly fitting for the atmosphere of this restaurant, the place also offers a few menus with a special option: axe throwing. Yes, you read that right. Please note that you will need at least 3 of your friends to come along, and to make a reservation beforehand.

Budget: “Festin Gaulois” (Gaulish Feast) menu for 40€

Axe throwing menus: 25 to 60€ per person (only at dinnertime, not available on Saturdays).

10) Dans le noir? – Random

Social networks are overflowing with nice and colorful food pics.

The taste can sometimes seem less important than the first impression of the meal, which is how it looks.

Dans le noir? offers to eat again with your senses of taste and smell, as it was long ago or … as blind people would do, because the room is completely dark.

During this blind taste, the visually impaired or blind staff will serve 2, 3, or 5 courses depending on your choice.

The game is to find out what is on your plate!

After you have eaten, you can see a photo of every meal you had and the ingredient list. If you’re afraid of cooked vegetables, you may be surprised.

Budget: Around 50€ (three courses).

11) L’Îlot – Sea products

4, rue de la Corderie, 75003

Of course you can have seafood in Paris!

Normandy and Brittany are not far and they are full of shellfish and fish to supply the French capital.

If you like to have a bit of everything, the plateau is ideal but it may not be enough and it serves only as an appetizer.

On the menu, you’ll find oysters, mussels, and tarragon or whelks with aïoli (garlic-based sauce).

For those who do not like seafood very much, L’Ilot has also composed meals with blinis, potatoes, or mozzarella and rocket.

You can have a smoked, marinated, grilled, or raw meal, or a soup … Everyone should be satisfied.

Budget: Around 40€.

12) Le Grenier de Notre-Dame – Veggie

18, rue de la Bûcherie, 75005

Despite its name, this restaurant is not in an attic, but on the ground floor of an establishment in the 5th district full of appeasing plants.

Le Grenier de Notre Dame is the first vegetarian and macrobiotic restaurant of Paris.

We all know what “vegetarian” means, but what about macrobiotic?

It is a way of eating to supply your body without any defaults nor excess (more or less).

Your meals will contain spelt, bulgur, vegetables, and agar-agar cooked in such a way that meat-eaters won’t even notice its absence.

Budget: Around 25€.

Octopus AND Sushi? A preschool uproar..

Perhaps Izzy's artichoke caused a stir amongst his preschool peers. Perhaps it was just something in the air that brought out the conversation about the foods children eat. Was it over his lunch of 1/2 an artichoke, along with an ear of corn, yogurt and some plums that the buzz occurred? Who knows but this is what happened..

When I arrived to pick him up, one of his teachers, Miss A., informed me that at some point in the day, talk had turned to the different things everyone eats. She said that Izzy told everyone that he liked to eat octopus and "raw sushi fish." The entire group ewwwwwwwwwwwed in disgust. Apparently not a single one had eaten sushi.. How is that possible? Granted with all of the bad press and mercury, consumption should be kept at a minimum but no sushi at all? And here I was thinking Jersey City was so cosmopolitan, 8 minutes from the Path from NYC but worlds away? I know Izzy's peers in NYC are munching up sushi left and right.

In any event, Miss A. had to explain to Izzy's friends about how everyone eats different foods, etc. I wish I could have been there. Maybe I need to plan a sushi introduction party for his class.

All that talk of sushi put Izzy in sushi-mode so on our way home from Great-Grandpa's this evening, instead of going to my selection, we agreed to go for sushi. We tried a new place, JC Sakura , which I had long eschewed for other establishments and it turned out to be fairly decent, especially my mango-lobster roll. Izzy was especially awed by the sushi boat. Even I was.

They still use white tablecloths, unlike most of the chain restaurants. The wine list still carries an in-depth and very impressive selection. We tasted wine and while thinking about each taste, a regular customer came to the bar, who is a friend of Juan. He offered us a sip of champagne. We had a bite to eat and I started to think about the day.

Juan’s cuisine is vitalized classic European and his tongue is legendary, both for food and wine. He liked a Pinot Noir from the four best and even though it was not my number one, with his tongue it was magic.

Then, suddenly, the gentleman from the bar gave me a red wine and asked what I thought of it, because Juan told him I know more about wine than he and anyone there. The wine was a clear message for me and I said: “Pure old world Bordeaux…great level of finesse and structure with over 20 years of age.”

His friend smiled and showed me a bottle 1970 Chateau Mouton Rothschild. He even had a price tag from the time when he got it – $42.70. The wine showed no watery rim and had a brown tone and edges. We finished the bottle with him and while we were there, a nice lady in the bar also tasted two of the Pinot Noirs, blind, so we could help her to learn about them.

We even enjoyed a rare Italian Varietal bottle from Juan and while driving home, we had a rare feeling. The day’s memories are what keeps us dreaming better. Thank you to all for making life the best!

Sommelier , Judge for San Francisco International Wine Competition

The ride was smooth, but how can it not be in a really nicely equipped Suburban? Our guide, Juillet Wellons, was every bit the consummate hostess — knowledgeable, smart, friendly, warm and very professional.

Our tour started at Antelope Winery – small and quaint, reminiscent of a country store, but that quickly changed. Our wine steward, Joyce, was a sweetheart. She knew her wines, yet never pushed anything too hard, taking the time to listen and steer towards good choices. She explained the winery’s history and the wine types so well, it was truly a comfortable welcoming experience.

Reyes Winery is nestled in a valley area surrounded by mountains, with restored Spanish style buildings. The setting is beautiful, but it’s the tour that makes it extraordinary. Avid artist, developer turned vintner, a real renaissance man — Robert Reyes is riveting in his talk about the ins and outs of winemaking on his sixteen acres. To see the operation, hear about his history and view and taste the results makes for a very special event.

Our tour ended with dinner at Le Chene and while it culminated in an unbelievably delicious meal it was the service that took it over the top. Juan Alonso, owner, commented that they were so far from anywhere that everything had to be good to keep his customers coming back. By the end of the evening we knew that to be a serious understatement.

The food– OMG! Hands down, our meal easily beat any five star restaurant! So satisfying, we had four orders of Escargot! Our waiter recommended the elk and while I have never had it before, it was meltingly fantastic (yes, this meat melted!) and I will go back for more.

Juan Alonso is suave, charming and gracious, we loved hearing about and sampling his wines. He knows what excellent service really means and his staff, even down to the bus person, gives such great attention that it was much more than a meal. This was the perfect ending to a magical day.

The Vintner’s Assemblage won’t disappoint! We were just on its first soft opening and it far surpassed anything we could have expected. I can imagine that as it evolves with these wonderful people it will only get better.

PISCO PUNCH

O ne of the best of the ambrosial legends wafted down the San Francisco decades since that dreamy period of unearthly wonderment known as “before the fire,” part myth, part recorded fact, part recollected grandeur consecrated by long acceptance, concerns the Pisco punch.

Around this sacramental brew the regional mythology of San Francisco’s Golden Age of Nabobs and Splendid Living gathers, perfumed by names that will live as long as she Old West recalls its heroes and its magnificos: Duncan Nicol, Leland Stanford, Joaquin Miller, and John Mackay. Others are shadowy or substantial as the light of time glances over their remembered profiles, the Emperor Norton, François Pioche, David Scannell, Isaac Requa, John Percival Jones, Mark Twain, and the god-like William Morris Stewart.

As with the Palace Hotel, there was scarcely a personality of consequence or character in nineteenth-century San Francisco who cannot be associated, as one of the faithful at Duncan Nicol’s Hank Exchange Bar, with the miracle and benison that all men of good will and sound judgment universally admitted the Pisco punch to be. No regional drink, not even the benevolent julep of Kentucky, the Medford rum of Yankee New England, or the Taos Lightning which brought civilization to the region the Denver Post likes to call the Rocky Mountain Empire, was more truly indigenous to the place of its most appreciative consumption. To be sure, the basic spirit from which Pisco was compounded was imported in great earthenware pipkins by sailing ship from far-off Peru, where the volcanic soil gave to the grapes an essential genius encountered nowhere else on earth. Until it reached San Francisco, however, Pisco remained merely one more of the ardent spirits that inspired men have evolved over the centuries from the grapes and grains of earth.

Once in the hands of Duncan Nicol it was translated, as by consecration in the name of a divinity more benevolent than all others, into Pisco punch, the wonder and glory of San Francisco’s heady youth, the balm and solace of fevered generations, a drink so endearing and inspired that although its prototype has vanished, its legend lingers on, one with the Grail, the unicorn, and the music of the spheres.

Like much of the vocabulary of California and many of the customs, artifacts, and social institutions of early San Francisco, Pisco was an inheritance from the Spanish days of the great ranches. Along with the Golden Gate and the Presidio at Monterey, the inheritors of California took over a number of pleasant aspects of Old Spain: the talma, or short cloak, of the mounted grandee, the siesta and the love of case it represented, a habit of calling the highways caminos, and a pronounced taste for Pisco.

Pisco punch, so far as anyone can discover, originated in the premises called Parker’s Hank Exchange, which opened in 1853 in the Montgomery Block, an edifice built by General Halleck and representing to its generation in San Francisco all that the Empire State Building was to represent to New York three-quarters of a century later. The Montgomery Block, at the junction of Washington, Montgomery, and Columbus Avenues, speedily became the most admired professional address in San Francisco and was filled with the offices of lawyers, top-ranking merchants, and the private bankers of the time. On its second floor was a splendid red-and-gold billiard parlor directly beneath, and under the same management, was Parker’s Bank Exchange Saloon.

Somewhere in the shifting mists that obscure San Francisco each evening as the sun goes down beyond the Golden Gate, the original Parker disappeared from behind the bar of this favored oasis. In his place there emerged—and name his name with bugles-Duncan Nicol, an authoritative, almost clerical figure, clad in immaculate white, his eyeglasses hanging over his right ear.

In the fifties in San Francisco a saloon for gentlemen that was run by men of breeding and manners was an extreme rarity. Barry and Patten, themselves New ling-landers from fine families, set the style when they opened their saloon in Montgomery Street next to the first office of Wells Fargo and Company. Their walls were hung with choice paintings, nudes not among them. Gambling was forbidden and the wines and liquor were irreproachable. There were no libraries or reading rooms, and many patrons COOK to the town’s better saloons to read their mail and the local newspapers. The New York and Boston papers, usually about three months old, which had come around the Horn in sailing ships, were on racks for all to peruse. Barry and Patten are still known to a later generation of San Franciscans for their gentle and illuminating book of recollections of the town in pioneer times.

It was the success of Barry and Patten in attracting a clientele of respected merchants, professional men, and first citizens generally that inspired Parker and his successor, Nicol, to undertake I similar project in the Bank Exchange.

Nicol was like no bartender or saloonkeeper before or since. In a generation when most San Francisco bartenders were recruited from the slugging carnivals of the Barbary Coast and acted as their own bouncers, he fairly radiated respectability. Merely to be admitted to the Bank Exchange was a patent of social and financial probity. Nicol tolerated no arrivistes. “Two of my punches are enough for any gentleman,” he would say serenely, “and I’ll have none others in the Bank Exchange.”

He meant it, too, about the two drinks to a customer. If a favored patron like Fire Chief Scannell or James Flood, the Nevada bonanza king who was himself once a saloonkeeper of note (both of them were known tosspots), wanted more, he could walk around the block, thus qualifying as a new customer. When millionaire John Mackay, perhaps the richest man in America at the time, wanted a third, he like everyone else raked his silk hat off the stag-horn rack, walked demurely around the block, and returned to get if. Nobody took liberties with Nicol.

It wasn’t long before the ritualistic imbibing of Pisco achieved wide fame. Passengers of distinction who arrived from Panama aboard the Pacific Mail steamers Strode down the gangway and told cab drivers in resolute tones to take them to the Bank Exchange they could register at the Palace after they had presented their credentials to Duncan Nicol. After 1869, when the steam cars came through from Omaha in a miraculous five days and patrons of the Central Pacific Railroad in Inverness cloaks and Sherlock Holmes caps were brought over from Oakland, as they are to this day, on the ferry, the first stop for knowing travelers was still the Bank Exchange. What Twenty One is to New York, or the Pump Room to Chicago, the Rank Exchange was to San Francisco celebrities in the sixties, seventies, and eighties.

Pisco came into the fullest flowering of its celebrity, became a generic term, and entered the local language. A writer in the California Alta elegantly referred to a drunken character as “more than piscoed.” Neill C. Wilson, the western historian, coined the simile “as comfortable as a Pisco jag.” Scores of lesser places advertised ‘ “The Original Pisco Punch,” but Nicol, serene and secure in unimpeachable supremacy, smiled on the competition and steadfastly kept the secret of the greatest mixed drink of the age.

The speculative contents of a Pisco punch were as much a conversation piece of San Francisco as its undeniable authority, its guileless approach, and its invariable triumph over the partaker who partook too well. Topers who managed to countervene the two-drink regulation, or who were susceptible to this maximum allowance, lapsed into unconsciousness with the docility of sleepy kittens, wreathed in smiles and dreaming heavenly dreams. Nobody ever got fighting drunk on one of Nicol’s punches. On the contrary, communicants acquired a perhaps unwonted courtliness of manner benevolence radiated from features usually stern, noted curmudgeons were gentled into fraternal attitudes of good will. Under its spell, misers donated liberally to good causes. The Pisco drinker was at peace with himself and with the world around him.

Nicol gradually achieved international fame. Of the Bank Exchange special, Rudyard Kipling wrote: “I have a theory it is compounded of the shavings of cherubs’ wings, the glory of a tropical dawn, the red clouds of sunset, and fragments of the lost epics of dead masters.” Before Kipling, Thomas W. Knox had written: “The second glass was sufficient, and I felt that I could face smallpox, all the fevers known to thefaculty, and the Asiatic cholera, if need be.” Lesser singers have hymned Pisco in less Arcadian cadences bin with no less veneration.

The Bank Exchange in Nicol’s consulship was, according to all contemporary testimony, quite unlike most of the well-upholstered San Francisco bars of its age. No barroom nudes profaned its hallowed walls. Thedécor was of a classic austerity commensurate with the exalted status of management and guests. Tessellated black-and-white marble was on the floor, the bar was of simple polished walnut, steel engravings of irreproachable theme adorned the walls. The Champagne buckets were of sterling silver and the handles of the beer pulls were made of authentic Wedgwood china.

A free lunch of fabled variety and viands in keeping with the character of the Bank Exchange were served daily from an enormous mahogany table in the middle of the main room. Awed customers remarked that the steel engravings in the back room-scenes of the French Revolution-were identical with the ones in the robing room of the House of Lords in London, and were valued at fifteen hundred dollars each by connoisseurs of such matters. The bar had been worn smooth at its outer edge by generations of drinkers, and old-timers were fond of recalling how. in the sixties and seventies, its well-to-do patrons often varied their noontime dice games for drinks by side bets for gold double eagles piled in neat stacks among the Piscos.

Duncan Nicol and the Hank Exchange remained honored institutions in San Francisco, as nearly immutable fixtures as mortality allows, until well after the fire of 1906. Pauline Jacobson, quoting from an old-timer in the San Francisco Bulletin in 1912, describes the remarkable uniformity of performance on Duncan’s part even though his hands were by now trembling with the years. “E-v-e-r-y one of them is mixed the same.” deposed the old-timer. “I had nine of them punches once and e-v-e-r-y one of them was mixed the same.” (Duncan must by that time have relaxed his mandate of two to a customer.) “If you came there for thirty-five years, every one of them would be mixed the same.”

And so we rake leave of Duncan Nicol, gentleman, perfectionist, austere acolyte of a noble priesthood, who could have flourished only in San Francisco’s golden noontide, and who will remain forever among her most durable legends.

On the true contents of the mysterious Pisco, who shall speculate with authority? Until only a few years ago a saloon calling itself “The House of Pisco” did business among the honky-tonks in Pacific Street and served a not unrefreshing arrangement which the management maintained was the True Sacrament as first devised by Nicol a full century ago. The drink wasn’t a bad one. and contained pineapple juice, and what passed in those days for Pisco, bur it embodied none of the magical qualities associated with the legend of the hank Exchange, and a few of them served to induce torpor without exaltation, something like the effect of a slug at the base of the neck.

Only recently a lineal successor to Nicol, Jack Koeppler of the Buena Vista Café in San Francisco, who has proved himself worthy of his noble heritage as an innovator by first launching Irish coffee on the American market, prevailed upon a fellow San Franciscan, Kenneth Prosser, to reveal to this writer what purports to be the recipe of the True Elixir. Mr. Prosser swears on a formidable stack of assorted books that the following recipe was recorded in his late father’s own handwriting and may be taken as Revelation. It comprises 2 jiggers of Pisco, 2 jiggers of white grape juice, I teaspoonful of pineapple juice, and I teaspoonful of absinthe, Pernod, or Herbsaint.

The problem which presents itself, even with this formula in one’s possession, is of course the procurement of the Pisco on which research must be based. A recent inquiry failed to disclose a single bottle of the essence.

And even assuming the prescription to be accurate, what was the secret of compounding the ingredients, the secret that required a good ten minutes of the master’s time and the Special skill of his matchlessly knowing hand?

Perhaps it is best not to delve too far into forbidden lore. Let us rather leave the secret of the Pisco punch a holy mystery for all time to come, like the language of Etruria and the divinations of the Chaldeans, the circles of Merlin, and the expertise of those chemists who produced the vanished dyestuffs of Tyre. Let its legend hover wistful and unobtainable over San Francisco as the mists roll in around Telegraph Hill at sundown. Let it not be profaned by a generation of haste and ineptitude, but let it remain a memory to be carried through the ages and to eternity only by Duncan Nicol, his eyeglasses lodged over one car and on his face a smile of transcendant wisdom as inscrutable and timeless as that of the Sphinx.
