One of my favorite zacusties is the one stuffed with a knife: with a little care and if I want with all my heart, it is also spreadable, but it has the advantage that I can use it as a food when I am in a time crisis. It is a pleasure to see the pieces from which, too often, the paste is made.

I tell you the quantities I use, you will adjust according to desire and taste. Because I don't put a lot of onions, feel free to add another one, or garlic. and so on

For example, for one Kg of peas cooked according to all the rules (onion and vegetable) and well drained, I put 400 gr. peppers / donuts / capia - baked, 400 gr. peeled tomatoes, and the remaining 200 gr. which remain for to equal the amount of beans - onion, garlic, oil (an onion, a small clove of garlic, max 150 ml. oil) I add peppercorns, a single bay leaf, a healthy hand of green parsley, a sprig of thyme, one teaspoon of salt per kg (so for this amount mentioned above I put 2 teaspoons of salt - but also the juice left by the baked peppers, which is salted in turn)

After I cook the onion well, until it is transparent, I extinguish it with the goodness of the juice left by the donuts (after baking and cleaning) and simmer it for another 10 minutes. under the lid until lazy on the spoon. Heat the oven. I start to make layers, layers: over the hardened onion I put a layer of beans, garlic, peppers, parsley, tomato fruit and so on. Salt and drizzle oil between layers, sprinkle with peppercorns, hide the bay leaf and thyme.

I put it in the oven, with a lid, for the first hour. Another half hour without a lid, at which point I shake, shake, swing the pan, put 1 tablespoon of honey and shake it a little more (I didn't write it on the ingredients because I only heard it in my area use honey or sugar - we put a teaspoon of sugar and when we boil the dried beans, it highlights the flavors without sweetening the juice, even if you don't believe it :))

I also do zacusca with mushrooms.

Otherwise, we proceed to put it in hot, sterilized jars - everything - like any kind of zacusca.
Trust this zacusca - it is very good as an appetizer (cold) type II (hot, with a crown of rice, polenta or puree) and dessert (instead of a joke!)

First I grated all the roots on the large grater: carrots, parsley, parsnips and celery. Then I put them in a pan with higher walls along with 50 ml of oil (out of 200) and a pinch of salt. I hardened them for 15 minutes under the lid, over low heat, stirring occasionally so they wouldn't burn. After the first 5 minutes I poured 100 ml of water. I continued to harden until the vegetables softened. Then I pulled the pan aside.

I also put the onion through the meat grinder, but you can also finely chop it with a knife. So is garlic.


The beans are usually boiled, that is, they are soaked in cold water in the evening, the water is changed in the morning and it is also boiled with cold water. After the first boil, change the water and boil it again, this time with boiling water and salt. After boiling without crushing the grains, drain and allow to cool. The donuts are baked and prepared as for the donut zacusca.

Boil in oil, pepper, bay leaves, salt, chopped onion and sliced ​​tomatoes.

Lower slowly, taking care not to get caught in the bowl. When it is low enough, add honey or sugar, mix with the beans, boil for 2-3 minutes and then put in hot jars, tie or put lids and sterilize.

We clean the pods of the extremities and wash them. In a deep frying pan put the oil, the broken beans and a cup of water. Cover and simmer over medium heat until all the water is reduced and the pods begin to harden in the remaining oil. Then add the garlic passed through the press, salt and pepper to taste and leave on the fire for another 5-7 minutes.

Turn off the heat, sprinkle with chopped dill and mix. We can serve immediately, good appetite!
